This week, I decided to spend my Sunday at home, where I planned to do some readings, research, and baking. I have been on to baking Oreo cupcakes for months now, due to my usual cupcake cravings. I was surprised how simple this recipe is, it actually took me about 15 minutes to prepare those pretty cupcakes.
So if you are craving a sweet delight and you have a limited amount of free time, then this is the recipe for you. I would also like to note, that I did not use an electronic mixer this time, since I figured that it is very easy to mix the cupcakes ingredients manually.
This recipe is for 6 cupcakes
Mix in a large ball: 1 cup of all-purpose flour, half a cup of sugar, half a cup of milk and 75 grams of melted butter. Then add a whipped egg and mix everything well, again I did not use an electronic mixer due to the simplicity of this recipe. Afterwards, add a tablespoon of orange zest, the thing that will give a very fresh taste to the cupcakes.
Start by filling the paper cups with a spoon of the mixture, place one piece Oreo over it, and then cover it with another spoon of the mixture. Repeat this process for all cupcakes, and then bake them for 15 minutes until they are slightly golden.
Meanwhile, I prepared a simple icing that will be used as glue for the candy on top of my Oreo cupcakes. Simply mix 1 cup of icing sugar with two table spoons of water and few drops of red food colorant.
Tip: place the candy in a paper cup in order to avoid making a mess.
Now for the decoration, wait until the Oreo cupcakes are fully cooled, dip them in the icing and then in the candy.
