The Making of Gingerbread
1- Preheat oven to 180°. And place wax paper on the tray to avoid the dough from sticking.
2- Beat 125g of butter and half a cup of sugar in a bowl until creamy. Then, add 1/2 cup of maple syrup, 1 egg yolk and beat until combined.
3- Mix 2 1/2 cups of flour, 1 tablespoon of ginger, and 1 teaspoon of bicarbonate of soda.
4- lightly knead until smooth.
5- Cover with plastic wrap and place in the fridge for 30 minutes to rest.
6- Place the dough between 2 sheets of baking paper and roll out until about 4mm thick. Use the cutters to cut out shapes. Place on trays about 3cm apart. Repeat with any excess dough.
7- Bake in oven for 10 minutes or until brown. Remove from oven. Transfer to a rack to cool.
8- Pipe icing over gingerbread treats and decorate them with Smarties and candy.
